Who doesn’t like a chocolate chip cookie warm from the oven?

There is something so simple and special about a chocolate chip cookie and a glass full of milk. This dessert is probably the the one that makes me most nostalgic for my childhood.

This classic recipe hits all the high notes for me. They are chewy and sweet, have the right amount of chocolate chips and the perfect hint of saltiness. It is almost impossible to just stop at one.

Good is an understatement! This recipe was found on the first page of the red binder.

Recently we decided that we would no longer buy sweets from the store. We already love to bake so I didn’t think much of that choice until I realized how often we were baking. It has been so exciting to try out a bunch of different candies, cakes, and cookies, but sometimes you just crave a classic.

One day I decided that I wanted to find a recipe for chocolate chip cookies in the collection. First I scoured the little wooden box, since that is where this all started, but unfortunately there were none to be found. The next was the Christian Cookery book and there were none in there either. I was starting to get concerned that I wouldn’t find one, but then when I opened the red folder on the very first page, in the top slot, was this recipe for Chocolate Chip Oatmeal Cookies. It was meant to be.

The fact that they had oatmeal in them made that discovery even more exciting as I love the chewiness that they give cookies. These were sure to be great with a glass of milk!

Chocolate Chip Oatmeal Cookies

Difficulty: Beginner Prep Time 15 min Cook Time 15 min Rest Time 5 min Total Time 35 mins Servings: 24

Ingredients

Instructions

  1. Pre-heat oven to 350*

  2. Mix together the first four ingredients in a small bowl. Set aside.

  3. In a large bowl cream together the shortening, butter, and sugars.

  4. Add the eggs, one at a time, to the creamed mixture.

  5. Add in the vanilla, chocolate chips, and nuts (optional) then beat well.

  6. Mix the dry ingredients into the creamed mixture a little bit at time until fully incorporated.

  7. Chill the dough for 20-30 minutes then use 2 spoons, or a cookie scoop, to drop 2-3 T size dough drops onto a parchment lined cookie sheet.

  8. Bake the cookies for 13-18 minutes or until they have  just started turning brown along the edges.  Remove the cookies from the oven and let them sit on the baking sheet for 2 minutes.

  9. Transfer cookie to a cooling rack.
