This recipe takes a few simple ingredients and transforms them into a hearty meal the whole family will love.

Do you love casseroles? I always have. I find them to be the best kind of comfort food. All the ingredients cooking together creating a wonderful mix of flavors and smells. I especially love seeing the casserole bubbling as I pull it from the oven. Creating an aroma so good that you don’t even have to call the family to to table. That is what first drew me to this recipe for Low Calorie Hot Dish(Ground Beef Cabbage Casserole).
But wait you say, the recipe says low calorie hot dish, not casserole. And you are right; sort-of. We are guessing the the low calorie part came from the fact that cabbage is low calorie and “hot dish” is another name for casserole. This is why we re-named this recipe from Low Calorie Hot Dish to Ground Beef Casserole to better describe what can be expected when making it.
This was the second recipe, and first meal, we made after deciding to explore these old forgotten recipes. I was looking for a recipe that had only a few simple ingredients that the whole family already liked and this one fit the bill.
As an added bonus I was able to buy all of the ingredients for this recipe for $10 at my local grocery store. So not only is this recipe easy to make, but it is an affordable meal option too.

Ground Beef Cabbage Casserole
Description
Ground beef, rice, and cabbage come together in this easy and low cost casserole. Follow the recipe as written or try it with my suggestions in the notes.

Preheat oven to 350*

Cut cabbage into 1/2 inch wedges and place in bottom of 3 quart casserole dish
or a 9×13 pan -
Brown ground beef and diced onion.
Drain off excess fat. -
Add rice to the browned ground beef and stir.

Add the meat and rice mixture to the casserole dish on top of the cabbage.

Mix the tomato soup with one can of water and heat until hot.

Pour the soup over the other ingredients in the casserole dish.

Bake for 75 minutes covered, then remove the foil for the last 15 minutes.

Let the casserole rest for 15 minutes before serving.
Notes
We found the original recipe needed some seasoning and could use a bit more tomato flavor. In our updated version of this recipe we changed the following.
- Use 1/2 c rice.
- Season the ground beef and onions with salt and pepper, to taste.
- Use 2 cans, or 1 family size can, of condensed tomato soup and only add enough water to thin it out to be able to pour (about 1/4 c).
- Add 1/4 t of salt to the tomato soup.
